Bánh my pâté trúng/Vietnamese baguette with omelette and pâté

It's been a long time since I posted a banh my,this time I am able to make my own baguette!
Pâté is also homemade,so is the carrot pickle.
I saw this one in a book about Hanoi's street food,it has an omelette in it,not sure if its authentic,but I like the idea.

I am always fascinated by this,the Vietnamese has turned this French sandwich using their own ingredients,and it's truly delicious!In Vietnam they sell this everywhere,and I can't get enough of it!
There are many different versions,the most authentic are made with Vietnamese style sausages and pâté,pâté is easy to make but sausage is harder.Or you could use French style pâté,and served with fish sauce and spicy sauce,also Vietnamese pickle and very important,coriander!

I am doing well,work is not busy,but there are new arrangements that I have to adopt.
I have just come back from a two weeks trip from UK and France,very enjoyable and I had many great food,hopefully I will have fresh ideas for SD!

Nothing to do work,I just went for a trip in Europe two weeks ago,I stopped by this old town at Belgium,called Bruges ブルッヘ,it really is peaceful and beautiful,I took too many photos..!
