Many people look down upon traditional British food,I don't.There is nothing more satisfying than good old fish and chips meal,but only in my specific way.Cod is usually what I order,I love it's flaky flesh,and of course the batter has to be light and crispy.Chips have to be fat and chunky,not necessarily crispy this time,in fact I prefer it a little soggy,but potatoes need to be good quality waxy ones.Also mushy peas,only made with dried peas,not fresh pea purée(like mine here,only I couldn't find dried peas here),and served with malt vinegar,and only that,no tartar sauce or lemon,or ketchup. There are still a lot of details to pay attention at In order to make a good fish and chips,I am doing as good as I can while I am stuck in HK. It's the one meal I wouldn't miss when I travel to U.K.,I hope it stays popular!
I love fish and chips, too! It's one of the British representative foods, and when I traveled Malta(former British Malta) this summer, I had a huge one like yours!

I have been eating this since small,never get tired of it.The batter is nothing very special,just flour,beer,baking powder and a little oil,it's a Jamie Oliver's recipe,I just altered it a little.Came out super crispy,very straight forward.But I need a big enough wok to put the whole piece of fish in.Also cod is not a local fish,I had to buy frozen one,for you in Japan is much easier to get good quality fish!It's new year soon for you,very special time,please enjoy all those delicious food!

You might be surprised,even we were a British colony,most British food didn't get very popular here.Locals believes fish is best when steamed,and chunky fresh fish like this is hard to get.There may be one or two fish and chips places here,and it's only the expats that would go.This one is good enough to stop my craving,the vinegar is truly essential! Had a box of flags sitting around,it was a chance to use! British Malta,not an obvious choice for holidays,it sounds exotic,you must had a great time!

No worries,but I did stay in UK for a few years,back then,fish and chips were popular and shops were everywhere,and very rare to find a bad one too,this is how it was made and served,and I love to stick to tradition.Of course mine doesn't even come close to the best one I had in UK,but it's good enough here!The batter was light and crisp,a Jamie Oliver recipe with a little alteration. Please try as well,it should be a breeze for for you,lots of fish choices too!
た、食べたい❤️ I used to live on the next door of chips shop and I'd always seen people queued the shop on Friday. Since we lived too close, we rarely bought any fish in there but living near a chips chop was fun and safety. Nobody got lost if I told the name of the shop. Lol.
