Start to roll with tide string and put in oven at 220C for 1hour. 15min. turn other side 15min. Then cover with aluminum foil cook 30-40min. It is cooked the temperature is 65-70C in the meat.

For the sauce: In a saucepan, heat a olive oil and chopped celery, onion and carrots stir add the boiled lentils(half blended), red wine, sage, rosemary, and tomato tin and cook for 20min. Add juice from the meat if there are some.
