Stuffed lotus root wheels with marmalade teriyaki sauce

Oh man...I know I cheated and skipped peeling and boiling the wheels in vinegared water to prevent the gross black color. I know I know. I shouldn't have. Well I learned the lesson that night. :) Beside that, taste was marvelous. I will definitely make the same sauce again.
