Chilli beef shepherd's pie

Tin of kidney beans in chilli sauce
400g
Lean mince beef
500g
Olive oil
2tsp
Parsnips chopped
1kg
Large onion chopped

Garlic cloves finely chopped

Tin of chopped tomatoes
400g
Cumin seed

作り方

Heat the oil in a frying pan
add the onion and soften with 1tsp of cumin seeds for a few minutes
then push the onions to the side and add the beef
brown well breaking up the lumps of beef.

add the garlic, kidney beans, and chopped tomatoes and half a can of water.

season with salt/pepper if needed, cover and simmer for half an hour.

Meanwhile boil the chopped parsnips in salted water until tender, drain the water and mash with some freshly ground black pepper and salt.

Heat the grill to high
Add the chilli mince to a suitable ovenproof dish
spoon the mashed parsnips over the chilli mince and sprinkle the remainder of cumin seeds.

Grill for five minutes or until golden.
ポイント

Add ground chilli flakes whilst cooking the beef if you prefer a little more spice (but add in small amounts)

You could use a chilli packet sauce mix from the supermarket, works just as well.
