Put the meat in a bowl and add the jalapeño, the red pepper, the egg yolk, the chives and combine. Form burgers in the desired size.

Heat the olive oil in a pan over medium heat and cook the burgers on both sides until they have this brown sear.

Place the Emmental slices over the burgers while in the pan until it melts but be careful to not overcook the meat. Remove from the pan.

In a small bowl mix the mustard, chilli flakes and jam and put aside.

Slice the buns on half, place the burger on one part, pour some of the sauce , add the basil and halved cherry tomatoes on top and put the other half of the bun.
