Chorizo and eggplant Linguine

Sauté garlic, onion in olive oil. Add 3 chorizos (sliced diagonally). Throw in an eggplant, also sliced diagonally, and wait till it softens.

Add chili flakes and diced tomato. Throw in some roughly chopped parsley.

Add in the mix 400g of al dente linguine with a cup of reserved stock. Squeeze half a lemon. Let it heat for 3 mins. Season with salt & pepper. Serve.
ポイント

I think you can also add some thinly sliced beef and bell pepper
