Boiled chicken in boiled water for 5-8 mins, just until the chicken's skin is tightened

Take out the chicken & set aside. Put about 6 cups of water (or just enough to cover the chicken) in the pot, then lemongrass, galangal roots and torn lime leaves. When the water is boiled put all the seasoning ingredients and chicken back into the pot. Let boiled 30 mins or until throughly cooked. Ready to serve.

Dipping sauce: finely minced fresh chili peppers, minced fresh garlic, 1/2 cup vinegar, salt, palm sugar or sugar. Taste to your desire.
