Separate egg yolks from whites. Pound yolks with 150g sugar, beat up whites with mixer adding a pinch of salt until the firm peaks.

Using blender pound creamy cheese together with softened butter, vanilla, 1tbs of semolina, citron. Add yolk to this mixture.

After no.2 carefully mix whites into the mass using spatula. Wash and dry raisins and add them in the end.

Cake mold grease with a little oil or butter and powder with flour. Put the dough inside and bake in the preheated oven 160C about 60 minutes.

Ready cake cool down inside of the shape and then carefully take it out.

Prepare chocolate topping: Dark chocolate, sugar, cream and butter melt in a small casserole on the water bath.

While the topping is hot apply it on the cheesecake using special spatula or blade of knife. Decorate your cake with fresh berries, mint leaves, physalis etc. Put it into refrigerator for some hours, better for over night.
