Piña Colada Parfait

Sprinkle the coconut flakes onto a baking sheet and toast in the broiler part of the oven.

As the coconut browns, Dump the pineapple gelatin into a small bowl. Check the coconut to make sure that it's not burning.

Bring a cup of water to a boil, then pour it into the small bowl to dissolve the gelatin. Stir until the gelatin is completely dissolved.

Next, make the coconut pudding according the directions on the box.

Once the pudding is mixed well add about 5 or 7 tablespoons (depending on your taste) of the gelatin to the pudding.

Stir till smooth, it will look like it’s separating, but keep stirring, it will blend together.

As your pudding mixture cools add the toasted coconut to the rims of your cups.

Slowly pour the pudding mixture into the cups. Be careful with the coconut rim as you fill.

Top with more coconut flakes, pineapple, and cherries as you desire. Add a tropical umbrella for that "Paradise in a Glass" look.
