Smoked cooked leg ham

Preheat oven to moderate 180C. Cut a line though the thick rind of a 7kg smoked cooked leg ham, 6cm from the shank end so you can easily lift the rind. Remove rind by rubbing your thumb around the edge, under the rind and carefully pull back. With a sharp knife lightly score the fat to form a diamond pattern. Do not cut all the way through the fat as this would come off in the cooking. Spread half the glaze over the ham with a palette knife or spoon and press a clove into the center of each diamond. I usually place also some pineapple rounds on the ham as this helps it keep moist. Put the ham on a rack in a deep baking dish and pour 2cups (500ml) water into dish. Cover the ham and dish securely with greased foil and cook for 45min.
Remove from the oven and spread remaining glaze over the ham. Increase the heat to hit 210C and bake uncovered for 20min. or until surface is Caramelised. Set aside for 15min. before serving.

Honey glaze:
Mix brown sugar, honey hot mustard together in a bowl. Spread over ham to glaze.
