Peel, cut and cook the aubergine in water with salt until they become soft. (Around 10min. ) the cooking pan is able to be covered. When it's cooked, drain the water.

Pour the olive oil into a wide saucepan set over at high heat and put the aubergine, salt and pepper, add garlic, parsley, coriander, sweet paprika, cumin and fry them, crush aubergine. Add tomatoes( make it like juice.) then turn down the heat, and simmer for about 20min until almost no liquid remains.
