You know I eat my own bread everyday,I make them all the time, but these came out good so I thought I could share with everyone... Focaccia is rustic and really delicious,not tricky to make at all,just do a pre-fermentation(biga/poolish) the day before,and make sure the dough has a high water content,at least 75%,please try it,making bread is so rewarding,I look forward seeing it!

↑全麥粉的份量是所有麵粉的40%嗎? 根據 jules份量的話,全麥粉是所有麵粉的三分之二吧?
就這樣吧,你也按照自己的喜好,試試不同份量,說不定你創造到一個完美的全麥focaccia。
至於tender wheat flour,我已再搜尋過,仍不知道確實是什麼....每個地方都有不同的喚法,很混淆...
