It's actually the second time I made udon,I love the extra thick ones,and they are hard to get here,so I give myself a 20 mins workout!The tomato and dashi dipping sauce is really good,not very traditional for Japanese,but it's a nice variation! HK's summer comes before Japan's,but not as hot as there,rarely get pass 34°,so I hope you take care too.I enjoy summer with cool food in cool room😁....

I know somen and hiyamugi,and a few varieties of Japanese noodle too,but there are so many regional ones and sometimes a little confusing for me.Noodle is my favorite food,and I try to have different types as much as possible when I am in Japan.Please recommend me your favorite noodle dish too,to make,to buy or to eat outside!
Hi Makiko! This is the second time I made udon,last year I made Sakura leaf udon,roll and cut with pasta machine,this time I tried hand cut,that's why it's not very uniform,I need to practice more! I think the most difficult is to get special high quality flour.I got this from tomizawa,especially for udon,it's good enough.The measurement is on the package,and I watched some tutorial videos on youtube,then a 20 mins workout followed! Good for keeping your body in shape,please go for it!

Sanuki udon is the most famous in Japan. Sanuki udon can be tried Sanuki udon shops in many cities in Japan. But if you visit Sanuki region, in Kagawa prefecture, you will enjoy very fresh udon dishes from morning till night with very reasonable prices. Each Sanuki udon shops have different taste. These udon shops are usually casual sometimes like a standing bars. You might also find a standing bar type Sanuki shops even at the airport. Hope these info will be helpful to you. Good luck!

I also love Sanuki udon,I haven't made it to Kagawa yet,but whenever I am in Kyoto or Tokyo,I always search for those small old standing udon or soba places t sample their handmade noodles,for me it's quite an experience!Unfortunately time is limited,and there are just too many others good food in Japan,otherwise I will have a better knowledge of this very special cuisine of Japan! The black rice udon and five flavors somen all look very appealing,hopefully I could find them next time,and of course Kagawa is the ultimate place to go for foodie like me,I need to plan that!I really appreciate your recommendations,thanks!
