材料・調味料
Egg yolk (for batter)
10 pcs
Corn oil or canola oil
1/3 cup
Sugar
1 cup
Instant coffee
4 tbsp
Water
1/2 cup
All purpose flour, cake flour
1 1/2 cup
Cocoa
6 tbsp
Baking powder
2 tsp
Egg white(for meringue)
10 pcs
Sugar
3/4 cup
Cream of tartar
1tsp

Preheat oven for 350F

Separate egg yolk and egg white

Desolve the coffee into the 1/2 cup of warm water

Combine flour, cocoa , salt baking powder then shift 3x

Add oil and 1 cup sugar to the egg yolk , add coffee mix , and the flour mixture , mix and beat until smooth in consistency about 3 to 5 min then set aside

For meringue cream of tartar into the egg white then beat at high speed for 1min

Gradually add the sugar then beat for 1 1/2 to 2 mins then stop the mixture do not over mix it

Pour 1/3 of your batter then fold carefully then pour another 1/3 batter then fold , then add the last 1/3 , do not over mix it

Then pour into your cake molds then tap to release the air bobbles

Bake it at 350F for 50 to 65 mins

Check after 50 min to see if its ready . Use bamboo skewer insert to thickest part of the cake , if it comes out clean and dry, it's done .
