I have mixed feeling about Peking duck. I love duck and I love it's crispy skin,but knowing the process it has to go through,sometime I wonder if it is worth it.I also hate to see the meat taken back into the kitchen after the skin is served. I simply grilled some chicken,to go with homemade 單餅/crepes/pancakes/,sweet miso paste,cucumber and scallion,and it's almost as satisfying.... There is no such thing in Chinese cuisine and I couldn't think of an appropriate Chinese title....
I remember 'Spring deer'. I love duck and I love crepes, you say 單餅. I know how to cook '春餅', is it defferent to 單餅? Then, crispy skin of duck and sweet sauce, homemade crepes, it looks perfect.
Thanks again! Spring deer is my favorite place,some of my best memory happened there! My first try making this,now I know making crepes like this requires skill,mine are just a little tough,I need to try other method to perfect it next time,or go for the 荷葉餅,a double layer one when toasting,then split in two before serving. 單餅is one layer,toasted both side.And 春餅 I am not familiar with,but I found out it's a thicker version,for different dishes...
