Heat ghee in a pan,add very finely chopped onions and fry until light golden color on a low to medium heat.Keep aside.

Mix flour,salt,1 tbsp oil and enough amount of water and make smooth dough.Spread little oil over the dough and cover the dough with a damp cloth and keep it aside for about 30 minutes. Knead again and divide the dough in to 4-5 equal portions.

Dust each ball with dry flour and using a roll pin,roll it in to a thin circle.Spread onion spreading on it.Sprinkle a little flour on top.
Make a cut in the center of the disc,holding the centre and roll the cut edge round in to a tight rope. Brush some oil in your hands,Cut the circle and stretch the rope and shape in to a 2 spiral,start from both ends.
Now brush ghee on the top of first coil.Place the second coil on top.Brush its surface with ghee too. Flattering with your palm to get a flat bsll,do the same with all the dough balls. Keep aside for about 15 minutes.

Using the rolling pin,roll out each spiral in to thick,flat circles.

Heat pan and put the parotas.Toss and cook each side by applying little ghee on each side. Cook until crisp and nicely browned on both sides,pressing gently all over with a flat spatula.

When cooked using both hands,try to beat it once,just like clapping,to separate the layers. Serve hot..........Enjoy
