In a bowl, mix together cooked rice and the yolk. Season with salt and pepper, set aside.

In a deep pan. Sauté onion and carrot with olive oil, when onion become translucent add garlic and italian sausage. Stir fry till cook through then add the rest of egg, season with salt and pepper.

When egg cooked. Remove from the pan. Set aside.

In the same pan. Fry the rice mixture with a little bit of olive oil. When golden, add the sausage mixture along with ketchup salt and pepper to taste.
