Beans salad with ricotta cheese

Found many different dried beans in the cupboard,they come from various places, Japan,Spain and US,add some fresh ones and made this vegetarian dish,didn't have enough parsley,so I threw some mint in it too,and actually made it so much better!

I love the combination of peas n mint:)

I wasn't going to use mint,but I ran out of parsley,and it was actually better and more refreshing with the mint,really goes well with the beans too,I am happy you like this !

Please try this!Just use any beans you could find,fresh and dried,a mix of everything,put in some crunchy vegetables too,dressed with a French dressing and herb,and don't forget the cheese too,it will make this specially good,I am sure you like this!

You spotted it and you are right!If you remember,I made a chicory and orange salad to go with my salt baked fish,I had some leftover chicory,so I spooned this bean salad on them and eat,and it was totally matched!Makes me happy I could finish everything in the fridge,but bean salad was good on it's

In fact Quinoa has high nutritive value but taste is so so...haha😅
