soak rice in water for 30min, drain, then repeat this process.

add lime juice and zest, (zest for the garnish), then place over a medium heat and bring to boil

reduce the heat to a bare simmer and allow the rice to steam through 10min

in a saucepan over a low heat. Add coconut milk, vanilla extract, sugar, and salt. Do not allow the mixture to come to the boil, and stir the sugar until dissolved, then remove from heat.

pour this mixture into the steam sticky rice along with mango pieces.

Lightly toast the coconut in a dry frying pan until golden brown. Lightly scatter with any remaining lime zest and serve.
