Lentils to die for

I’ve been working to master lentils like my favorite Italian restaurant. Tonight... I did it. Mirepoix, lentils, broth, red wine, tomatoes, Parmesan and kale. I topped with a little goat cheese. Perfection. Wish I had a better photo.
