Boil the lentils for about 30min, along with the onion, garlic and bay leaf until tender. Drain and let to cool down.

Pumpkin slices put together with the skin in a microwave oven for 5 min, peel and cube.

Ready pumpkin cubes put on a hot frying pan an caramelise on medium heat with honey for several minutes.

Pour into large bowl lentils, pumpkin, mint, parsley, vinegar, olive oil, salt and pepper. Mix lightly, spreads over the goat cheese (feta), pine nuts or walnuts and serve.
