Rinse chicken off in cold water and pay dry. Preheat oven to 425.

In one dish, add a generous amount of ranch. In a plastic bag, crush ritz crackers and pour into second dish.

Roll each tenderloin in ranch, then into the crushed ritz crackers. Place in baking pan.

Sprinkle with Parmesan cheese and salt and pepper to your liking.

Bake for 45 minutes until center is cooked and juices run clear.

I made this with mashed red potatoes, fresh green beans and candied yams.
Mashed potatoes: Wash and cut a slit in red potatoes. Microwave on high for 10 minutes until soft. Mash and sprinkle with salt and pepper. Add two scoops of sour cream and whip.
