Wash paprika. Finely chop garlic and Italian parsley (leaves only). Preheat oven to 210C. Put the aluminum foil in the oven tray and sprinkle it with oil and then put whole paprika (without cutting it). Bake paprika for around 30-40 min or more (depends on the size) till its skin is darkened and soften. Check paprika while baking and turn it on other side if necessary.

When paprika is done place it into the plastic bag until cooled off, then peel the skin gently. Place paprika into plate, add crushed or finely chopped garlic, oil, water, vinegar, finely chopped Italian parsley and mix. Put it to fridge to cool down. Serve as it is or with bread or toast.
