Happy New Year to all!
This year end soba,with にしんnishin,actually that's what I have every year,because I love nishin.
And, にしん soba is my favorite soba!But I was sorry I could not eat soba this time ...your にしんsoba looks very dericious!!

にしんsoba is a favourite of mine,I eat when I am in Kansai,and always bring back にしん甘露煮to eat at home.I once thought of making myself,but I know that's not easy...
I forgot Kansai style noodle soup should be lighter in colour,I will make it more authentic next time!
かまぼこdecoration is just beginner's level,but still a new challenge for me😅.

I know 年越しそばhas many styles,it's easy for me to choose,that's with にしん!I love it so much.I wish I could make にしん甘露煮,it's too much work,instead I buy from my favourite shop 近為.

にしん蕎麦 was lazy work,everything was store bought,I am new to かまぼこdecoration,that took me most time 😬,so glad you like it!

「松葉」というお店に行ったことがある? 京都の、ニシン蕎麦の有名なお店だよ。
香港でも年越しに蕎麦を食べる習慣があるとは知らなかった!

Thank you,I love Kyoto style にしんそば,but a lighter colour dashi should be more authentic,I forgot this time...
I have tried both やぐ羅and 松葉,I prefer 松葉's more.But this piece of
nishin is brought from pickle shop 近為,I think it's even better,it has a hint of smoke flavour.
There is no eating soba custom in HK,and most people never heard of nishin soba,apart from Japanese expat,I think I am the only one in Hk making it.😬
