The reason I made ume syrup was because of this.I once had it in a Korean restaurant in Tokyo,and they served it with a ume syrup,it was new for me and I found it brighten up the while dish immensely.I couldn't get this syrup anywhere,seems like making it is my mission from now every year.
Yes,my 梅シロップ was made for this,it goes really well with Korean cold noodle,I only found out not so long ago, I will definitely have this combination from now on! I also love the chewy texture of the noodle itself,not like any other noodles at all. In HK too,many people are making their own ume wine now,but not so many know about ume syrup.Our ume is quite fragrant but a little hard to remove bitterness from the skin...

When I was researching about this,I also see apple and water melon being used,but I think pear is suited better(could not stand water melon in a soup noodle!)This Korean style cold noodle is so well balanced,and it hit every senses for me,no wonder it's popular in summer.I was thinking I should take too much credit too,there wasn't a lot of work for me,the soup was pre made... Ume syrup is essential,please go for it,just drizzled over is better,but if you are adventurous,you could go one sip of syrup and one slurp of noodle,很有趣的! 感激不盡了,常常給我這樣好的評價!
