沙茶鮮魷/椒鹽鮑魚

Two seafood dishes,
Squid with satay sauce,satay sauce up made up with peanut and various spices,specialty from south east Asia.China,Chiuchow,and Taiwan also has many dishes made from this sauce,mine is ready made in a bottle,gift from a friend,but I also added Thai basil,I don't know if this is do
done anywhere,but I think it works,adding a layer of fragrance.
Chili-salt abalone,similar preparation to the famous chili-salt squid that all Cantonese seafood restaurants serve,and abalone is just as good!

Actually I have to thank you!In Chinese we just call this 鮑魚,no matter their sizes,big or small,so I always thought these are アワビ,and I didn't know トコブシ,then I checked and I found out トコブシ is actually small size アワビ,am I right?They are steamed first,until almost done,dredged with flour and deep frie
fried,then stirred fried with chopped chili,garlic,salt and pepper,not that difficult!
I love legs of the squid,especially big ones like these,but can't buy them fresh,they are frozen,all legs in a packet,perfect for me!Thank you for your compilment,I am happy!

哈哈,故事是這樣的,跟客人聊起,我很喜歡沙爹的味道,她便托人從內地帶了一瓶給我,據說品質特別好的,特意用它做這道菜,想試清楚它的味道,什麼也沒有加,只炒香蒜泥和沙爹醬,再下川燙過的魷魚鬚,和其它蔬菜一同炒便是,最後加點麻油,特別的是我下了些金不換,在外邊還末試過,只是一直都覺得會很對味的便這樣做。至於沙爹醬的味道只覺不過不失,或者下次會加些粗粒的花生醬和魚露,但我想仍然不及那些潮式老餐舘的惹味,還是要自己做罷。

Like I said,many Asian countries(and even brands and restaurants)has their own satay mix,mine is from bottle,gift from a friend,I just make it special adding Thai basil,it's my thing!The sauce itself is just ok,maybe I have to add thi
things to it,but still can't compete to some restaurants I think,it's better to try make my own!Actually 沙爹醬,沙茶醬 and satay are similar things,just different languages pronounce differently.I think the most representative satay dish is from Indonesia,which you dip grilled skewered meat in satay sauce

Yes,rooster has good meaning, especially to the peasant community that these bowl were first used,meaning new day,new beginning,also the peonies and leaves have good implications too.Also 雞 sounds close to 家 in their dialect.Anyway please check them out first,this is the place I will take you.
