Irish stew

Here is my idea of Irish stew:just very few things in it,lamb,potato,carrot,onion and stock,no wine and not even any herbs.Everything is cooked so slowly and long till they are super tender and the stock is thickened by the starch of the potato gives off.The colour is very pale,so no browning at any stage.It really is a rustic peasant dish,and Irish aren't the fancy type when it comes to food.
If you haven't live there,it's hard to understand and appreciate the simplicity of this.But I have,years...
The addition of pearl barley though,is new to me,I read about some people doing it,I thought it's a good idea.

You are right,I love stews for winter,and other comfort food too,but HK is still warm,over 20C°,I heard Japan has been warm last week too...
It's pearl barley,quite similar with 押し麦,but rounder in shape, 押し麦could be used here too!
As a child,I ate what I was given,I didn't understand why the potato was cooked so soft,but now I love it and pretty sure how this dish should be done,I respect tradition!

Your dish looks good, and the slow cooking with vegetables will warm people's bodies deeply.
You did not mention about seasoning. Did you use simple seasoning, such as salt and pepper? Also, was the soup stock beef?
I live a similar temperature place like you live, but I want to try the Irish stew.

HK is not as cold as Japan,but this kind of dish is what I enjoy most in winter,and I have special affection with this particular one!
The seasoning is just salt and pepper,the stock is chicken stock,which is more convenient for me,my lamb comes with some bones,so it flavours the stock too.It's all basic cooking.I forgot to mention I had garlic in this too,just in case you want to make.
I wonder where you live,may be Hawaii?Stew is best eaten in colder month,but I am sure it's not a fixed rule,our people here eat hot pot in summer!
