Rinse the duck meat and chicken shanks very well. In a pot, add water with 1tsp salt and boil the meat and chicken shanks until foam comes on the top of water, throw water, rinse the meat and add clean cold water then boil again; repeat this twice.

On the 3rd batch of water, add whole onion, carrot, salt and pepper and boil again at low fire with a lid for around 2-3hours.

When the meat is boiled, take out the meat from the water and let the water cool down a little bit; after add crushed garlic into the water mix then filter the water.

In a bowl, place duck meat without any bones, pieces of boiled onion and carrot, pour the filtered water in the bowl and keep in cold place at least 2-3hours, until the water becomes jelly.
