Chili Cauli, Crispy Renkon, Shouyu-Mirin-Sake Swamp Cabbage

Fry renkon until crispy.

Cut swamp cabbage (空芯菜) then stir fry in butter or regular oil. Add shouyu, mirin and sake. Turn off fire before it gets too soft.

CHILI SAUCE

Chop green chilies or jalapeño into ~2mm thickness. Stir fry in a lot of oil (if it's really spicy, the oil would be really yummy, perfect for many dishes). When it gets a little softer, maybe after 3-5 minutes, add in some crushed canned pineapple.

Pour in some vegetarian stir-fry sauce or oyster mushroom sauce or Worcestershire/Worcester sauce.

Add a spoonful or two of vegetarian barbecue sauce. Pour in some soy sauce.

Sprinkle with some salt and pepper.

CAULI-CHILI

Stir fry cauliflower in chili sauce.
Or if you want it softer, boil cauliflower. Then stir fry a little in chili sauce. Or you can just side the boiled cauliflower with chili sauce.

ON CHILI SAUCE...

Boiled broccoli actually is more popular among people who've tasted my chili sauce. But aside from cauli and broccoli, it also goes well with stir fried snap beans, tofu, some soups, etc. This chili sauce is applicable for a wide range of imagination. 😉

I used to stir fry some black beans with my green chilies, but they are not widely available in Japan, or at least near my place.
