Amaretti is a sweet almond cookie.I also used it with my balsamic strawberry dessert a while ago.It's the Italian tradition to sprinkle the cookie crumbs on this pasta dish.Because I use Japanese pumpkin and I find this dish a little on the sweet side,so I drizzle on some
balsamic and balance it a little...

Wow...i'm so curious and new for me! Sure,i remembering your desert,and I'd Amaretti for my sweet snack so far..Didn't know that Amaretti used in savory dishes✨

Well,I have never eaten this in Italy too,but I have see this recipe in lots of Italian cookbooks,and I trust this it an traditional Italian thing to sprinkle amaretti crumbs on this certain filled pasta.May be it's just me,I found the whole thing taste a little to sweet,that's why I drizzle balsami
balsamic to balance this a little.Another reason may be the Japanese pumpkin I use is much sweeter than the italian's.So next time I'll use almond flake instead,or make a more savoury pumpkin filling.Please go ahead and try,see what works best for this and let me know.

I spend sometime to make this in my day off!It's nothing new,instead it's a old recipe from Italy,filling is just made from pumpkin,onion,olive oil,nutmeg and Parmesan cheese.The pasta is made with all egg yolks,so it's softer,and very simply finish with brown butter and sage,I felt like in Italy ea

Yes,I made these on my day off,I am usually not good at wrapping things,so I need more time,but it's something very satisfying eating food I make from scratch,I hope you try sometime!
