材料・調味料 (4 人分)
turkish pide dough
2 large or 4 small dough balls
organic spinach leaves washed
250g
shiitake mushrooms finely diced
100g
red onion finely diced

garlic fined minced
3 cloves
gorgonzola freshly grated
1/2 tbsp
feta cheese crumbled
1/4 cup
brandy (optional)
1 shot
white pepper
pinch
cayenne
pinch
sea salt
small pinch
black pepper
pinch
dried chili flakes
pinch
beaten egg

unsalted butter
2 knobs
作り方

in a sauce pan over medium heat, add in 1 knob of butter. once the butter has melted, add in garlic and onion. saute until the onion is translucent. add in mushroom and saute until the mushroom is dark brown in color. add in brandy and spinach. cover with a lid. once the spinach start to wilt, remove the lid and stir the mixture to combine well

add in the 2 cheeses and stir to combine well. season with salt, white pepper and cayenne. taste and adjust the seasonings. remove from heat and set aside to cool

follow the instructions in my turkish pide dough recipe for steps, tips. tricks and shaping directions. once the dough is shaped, scoop the spinach mixture in the middle of the dough. season with black pepper and chili flakes

fold 2 edges to the middle and pinch to seal the edges. pinch both ends tightly to resemble a boat shape. transfer to a baking tray lined with parchment paper. in a small bowl, add in egg and 1 knob of butter. whisk lightly to combine well. brush the egg mixture on the whole pide. wack into a preheated oven and baked until it is golden brown and bottom is crispy brown

as soon as the pide is out of the oven, immediately brush the pide again with the egg mixture. slice and serve immediately. voila! spinach turkish pide!
