Lemon tart

材料・調味料 (2 人分)
Plain flour
130g
Butter (unsalted)
113g
Icing sugar

Salt
A pinch of it
Lemon
1 cup (150g)
Egg yolk

Double cream

Mix the dry ingredients first.

Knead the cold butter with the dry ingredients and reach a dough-like consistency.

Wrap it up and put the dough into the fridge for an hour.

Turn on the oven at 200 degree celsius and heat it up.

Cover the pie tin with a baking sheet and put baking beans onto it. Put the tin into the pre-heated oven and bake it for 10 mins.

Make the lemon curd by juicing 3 lemons which usually yield 150ml of lemon juice.

Separate 5 egg yolks from the eggs. Mix the egg yolks and caster sugar together till combined.

Add double cream into the egg mixture. Stir and combine. Add lemon juice and zest into the mixture.

Pour the lemon mixture into the baked pie shell and bake the pie for another 30 minutes at 160 degree celsius.
ポイント

While pouring the lemon mixture into the pie shell, do it at the oven with a jar. This will help to minimize the number of bubbles in the liquid which will provide a higher possibility of having a smooth surface.
