Mantzia🇬🇷 Stewed vegetable dish from northern Greece🇬🇷

材料・調味料 (4 人分)
Chopped Canned Tomato
400g
Aubergine, quartered
250g
Green peppers
200g
Garlic, chopped
4cloves
Parsley, chopped
1/2 bunch
Big shallots, chopped
1pc
Greek Feta cheese
100g
Olive oil
Pinch of salt
Sugar
2tbs or more to taste
作り方

Put the all ingredients (except for Feta cheese) into a pan and on strong fire.

Frying until they are tender for around 5min and add salt to taste.
And mix them constantly for another 10min. Adding olive oil if it is needed.
Add sugar and taste them then adjust salt if it’s necessary.

Put the mixture into baking pan and crumble Feta cheese over the mixture.
Put it into oven 230C for 10min, until the feta cheese is brownish.
