Roasted pumpkin and zucchini pearl couscous topped with goats cheese

Pumpkin
500grams
Zucchini
2-3 large
Pearl couscous
Goats cheese
Lemon juice
Smoked paprika
Olive oil
Fresh herbs

Roast pumpkin and zucchini (dice into squares). For flavour I drizzle olive oil and Rosemary which adds a little crunch. 15-20mins

Cook pearl couscous based on packet instructions

Combine dressing of olive oil lemon and paprika. Taste on its own is not that great but once added to couscous it's very tasty
