Escabeche de Champinones;)

A few kind of mushroom
500g
White wine vinegar
200cc
Brown sugar
80g
Salt
12g
Black pepper
6g
Garlic
2 cloves
Thyme
2 bunches
Cloves
2 pieces
Rosemary
1 bunch
Laurel leaf

Clean the mushrooms lightly and boil them for 2 min. To make marinade liquid, put all ingredients in a pan and boil it once. Add the mushrooms to the liquid and cook for 1 min. Turn off the heat and cook it off. Keep it in refrigerator for a couple of days before serve.
