Twice Baked Potato

Large Potato

Mayo
1/2 tbs
Sour Cream
1 tbs
Parmesan Cheese
1 tbs
Garlic Salt to Taste
Black Pepper to Taste
Chopped Green Onions
1 tbs
Chives For Garnish
Butter

Rinse and dry potato and stab with fork or knife on all sides. Rub with olive oil and sprinkle salt lightly. Wrap tightly in foil and bake on pan for 1 hour in 400 degree preheated oven. Take out the potato and let cool enough before handling.

Cut the top layer off the potato and carefully scoop out the inside and place in bowl. Sauté the green onion and place into bowl. Mix all the other ingredients together and whip until smooth. Set potato into a 375 preheated oven and cook for another 15-25 minutes until cheese is melted and potato is hot. Sprinkle chives on top and serve.
ポイント

I used a russet potato in this recipe. I find them to be large enough for a meal. Also, you can add Sautéd shrimp and bacon if you'd like to turn this side dish into the main dish. I find that shrimp Sautéd in butter and minced garlic goes great with this dish. Add cayenne pepper for extra heat if you'd like.
