Dark Chocolate Mousse

Dark chocolate
Half of 1/3 cup
Milk chocolate
Half of 1/3 cup
Butter (unsalted)
1 table spoon
Hot water
1 table spoon
Large egg (separated)

Double cream
1/2 cup
Sugar
1/2 table spoon

Melt the chocolate using a double boiler or simply use a microwave. Once melted add in butter and hot water, mix until smooth.

Whipped egg yolk and sugar until light in colour. Reheat the chocolate until warm (not too hot but temperature warm enough to kill off bacterias from the raw egg and not cooking it. Approximately 10-20 seconds in microwave) and then fold in 1/4 of the chocolate into the egg yolk then the rest until fully incorporated.

Whipped egg whites until soft peaks formed. Reheat mixture from step2 until warm, fold in 1/4 of the mixture then the rest until fully incorporated.

Whipped the cream until soft peaks formed (not too long or else you'd be making butter!!). Fold in 1/4 of mixture from step3 and then the rest until fully incorporated.

Serve in a small glass or cup

OR

(Optional) put chocolate mixture in a piping bag (with Wilton 2D or 1M piping tip). Pipe in a small glass or cup from the middle and twist it around until the edge. Work your way from middle to out, this will create a rose pattern. Use on baking paper first if necessary to practice!

Refridgerate for 4 hours or even overnight to get best results.

The mousse will turn out to be thicker and a lot richer than normal milk chocolate mousse as we use more dark chocolate in the dessert. The recipe works well too with only milk chocolate or even white chocolate. Do not be alarmed if the mixture turns out too runny if use milk chocolate! It happens, just refridgerate it for a few hours and you will get a nice creamy mousse with a lovely textureâ¤ï¸.

If you use a piping bag for the dark chocolate mousse, make sure you work real quick! Your hands' warm temperature would make the chocolate runny after a while, if it gets too runny just pop the chocolate in the fridge for a few minutes and work with it again. Don't leave it in too long or else it'll set! ðŸ«
