potatoes (boiled day before in skin)

onion (little cubes)

garlic (very little cubes)

salad sauce
1 cup
sunflower oil
a little
butter
2 spoons
White wine

作り方

rub down the skin of the potatoes and rub them with a Rösti Raffel.
Preheat a frying pan on middle heat.
then add sunflower oil and butter.
Add the rubbed potatoes and let them on Medium heat, don't stir.

Put 2 plates in oven and let them warm on 80°.

Take another pan and grill the meat step by step only a little by little. Not more then 2 spoons by step. one side on high heat with a little butter then put aside one a plate, then repeat until everything is grilled. Reduce the heat and onion abd later garlic. Stir until they are a little shiny. Then add flour and stir well in the pan. Add pepper, salt, Paprika pouder, give a good shit of White wine. Reduce and then add the meat fonds or a little meat cube.
Boil it a little.

Then add some salt and muscat on the potaroes and swap the Rösti.

When the sauce is a little thicker, whip cream in a bowl, reduce the heat and add the whipped cream to the sauce. Prepare the salad sauce and wash the salad.

Swap the Rösti again all at one if needed.

Then take the preheated plates and serve the Rösti and meat. Serve the salad sepperate in a bowl.
