Mushroom, spinach and red pepper quesadilla

レシピ
材料・調味料 (3 人分)
Fourtortillas
Two large handfuls baby spinach
Two baby red peppers
1 cup grated cheese
150g mushrooms
作り方

Put all ingredients except cheese into microwave-safe dish and microwave on high for 35 seconds.

Warm up your pan and then put in 1 tortilla.

Add a layer of cheese to the tortilla, top that with half of the microwaved ingredients. Top that with another mia of cheese and cover with the second tortilla.

Press down gently on the tortilla and flip when the cheese at the bottom has melted

Do the same on the other side until both sides are browned to your liking

Slice your tortilla kick into for quarters. I use a roller pizza cutter

Warm your pan gently and put in the first tortilla with cheese just to start the melting process while your vegetables are in the microwave.

Healthy easy breakfast. Just add lettuce cheese for an even healthier option. I will try with avocado next time
Sorry that should have been 'LESS cheese'. Though lettuce would be nice too! :-)
