Blueberry cheesecake

材料・調味料 (8 人分)
Blueberry sauce: blueberry
1 cup
Water
1/4 cup
Sugar
1/4 cup
Lemon juice
1 tbspoon
Cornstarch & water
1 tbspoon each
Biscuit layer: Oreo (w/o cream)

Cheesecake: cream cheese

Nestlé cream

Corn flour

Blueberry sauce:
1.put blueberry, water, sugar and lemon juice in a pan and cook on middle heat till blueberry become soft and the water become dark.
2. Mix corn flour and water
3. Pour corn flour mixture slowly while stir-ing the blueberry. Stir until the mixture can coat the back of your spoon

Cheesecake

1.Double-boil cream cheese and cream until smooth.

2. After a minute off the heat add in yolks. Whisk to combine.
*Make sure the cheese mixture is not too hot. Hot cream will COOK the yolks. If the bowl not hot to touch, the temperature should be right.

4. Then add in sifted flour and whisk to combine. Set aside.

5. In another clean bowl beat egg whites until foamy. Add in tar tar. Continue beat and add in sugar 3 time separately until it reaches soft peak form.

6. Scoop 1/3 of the egg whites into cream mixture. Use spatula to fold in evenly into cheese batter.

7. Next pour the cheese mixture into remaining whites and fold till combine. Scraping remaining whites at the sides bowl and gently fold till well combined.

8. Pour batter into lined pan. Steam baked in preheated oven at 160C for about 1 hour 10min
* Do adjust your oven accordingly.
* I used steam baked method. I place the hot water pan in the lower rack and the pan at the middle rack. Therefore not need to worry about the water sipping inside my cake. Save wrapping too.

9. After the baking time is over, slightly open the oven door and let the cake cool completely inside the oven. Once cool spread filling on top. Keep in fridge for several hours or overnight.
