Love lemon curd,but when I saw this from Makiko,I had to make it,the idea of having yuzu curd at my breakfast makes me get out of bed without too much difficulty. Hi Makiko,thank you for the recipe,it's very helpful,I added some yuzu juice in too for some nice sharp tartness,I love it. I did get out my bed to make breakfast,but I got right back in and enjoyed it in bed....

I am addicted to yuzu!Such a shame it's also hard to get here too. Yes I agree,goes well with noodle,I especially like duck namban soba,yuzu zest really elevates it!

一般情況不會在床上吃東西。不是怕弄髒,而是根本沒有足夠時間。當天拍照想找一個特別的場景,賣弄氣氛的😬,拍完了快快的吃,然後便離開了,一切無恙!
看到柚子curd很想吃,就算不便宜的也買了柚子做,日本貨。未聽說過大陸有柚子,有的都是大大個像你們的晚白柚的那種。柚子都是日本產的好!
Makiko 提供的食譜沒有用上柚子汁,只用皮,我看lemon curd 也會用汁的,所以我也加了柚子汁,但份量不夠,剛好家裏有瓶裝的柚子汁,再加上一些,才有我喜歡的酸味,也可好好平衡那個份量的糖。

對,大陸的柚子和日本的根本不同,很大的,以前我看大陸的小說時出現了「柚子」,那之後我對大陸的柚子興致勃勃的。
我在電視上看過日本柚子的栽培者說柚子的果汁和柚子皮配起來香味就變得更濃郁,所以我盡量利用果汁。可惜很多柚子果汁不多,我懷疑你怎麼做這個柚子curd⋯ 原來用瓶裝的柚子汁!
我最近也做過你教給我的poolish focaccia,這次放了一點rye wheat,非常好吃的! pain de champagne 也是我特別喜歡的麵包,想做是想做,但我烤箱的最高溫度不高,而且這種麵包發酵麵團時須要專用的籃子,所以還沒嘗試過⋯ 總是吃著買來的呢😅
中國和泰國的柚子是很類似的,就這樣吃和做沙拉都不錯。有心機的話,柚子皮再可用,做懷舊菜'蝦子柚皮',是我的至愛。
需要柚子皮香氣的話,日本柚子是無可代替的,可惜汁液不多。在家裏有瓶裝抽子汁,新鮮柚子太昂貴,這個用來代替,做醬汁之類的東西,可以暫時止一止我的柚子癮。
好的,你做了改良過的rye focaccia,更符合自己的口味!我也做了含全麥粉的poolish focaccia,20%的全麥粉,90%水,胡桃一半切得細碎混進麵團,一半整粒的最後入烤箱前塞盒進表面,像橄欖focaccia 那樣,結果也十分美味。
Pain de campagne 需要温度高嗎?記得你說過你家的烤箱温度不高,但一般家用的240C°也能做到吧,既然做到focaccia,其他的更不是問題。專用籃子也值得投資啊,價格可以接受,pain de campagne 這樣美味的麵包可以一直做下去的!不然的話,什麼塑膠籃子或colander 之類也可以,加塊棉布便行,功能一樣的!

我的烤箱最高溫度是230攝氏度,而且用來實際上的溫度不夠高,最近烤了蛋糕,竟然要烤食譜的三倍以上的時間!😥
