Had this one more than ten years ago in an Italian restaurant in Tokyo,we were there just for drinks after a proper dinner,this dish was only ordered to go with the drinks,but very memorable for me.

Could never forget that dish and that night...I wanted to eat more but couldn't,and so many time I went back to Tokyo but never made it to that restaurant again,and now it's closed down.It's a long story so I won't bore you. You know I just love wafu everything,luckily this one easy enough to reproduce,it couldn't beat the original but acceptable. Yep I have always had mr froggy in mind since we met in Kyoto,so glad you remember too.I wonder,my carver expert friend,do they have a cutter doing this or it's carved entirely by hand?Is there a significant meaning other than just a seasonal decoration?

If you did it by only knife,you are almost an artist😳👏👏✨✨ I've never seen frog cutter,but many pro chef are ordering special cutter to 有次.Frog is just seasonal objet but it's one of good fortune in Japan too.Frog is pronounce to 'Kaeru' in Japanese,It same pronunciation with '帰る/return'. They garnished it for the customers could revisit to there as their hopes too. now I'm looking for swallow cutter,wanna more collect tiny Japanese cutter.it works well at wagashi making too😊 thanks!
I have never seen this style of cutter,so I cut it by hand,using knife and no carving tools,you could imagine it was not easy,I spent too much time on this....Thank you for letting me know,I see it has significant meaning,very nice gesture indeed from the chef. Swallow is so cool as decoration,I will wait to see how you use with wagashi,very promising for me.Please let me know if you couldn't find one,could go and look for it in Shanghai street,the place I took you!
