Nice plate,,you use moleculaire cuisine?
To: bugatti83 hi there! This was taken at Pescatore in Christchurch NZ, it's a goats cheese cheesecake with shortbread crumb and mango sorbet, pistachio nut tuile, mango purée and dehydrated raspberry. I would say its molecular cuisine. Every dish was 'deconstructed'.
