Eggplant Jambalaya with soyrizo over jasmine rice

レシピ
材料・調味料 (2 人分)
red bell pepper chopped
1 medium
mushrooms sliced
5 large
eggplant cubed medium
1 small
onion shopped
1/2
minced garlic
1or 2 tsp
olive oil
as needed
red pepper flakes
to taste
cooked jasmine rice seasoned to liking
2 cups
tomato sauce (plain or slightly seasoned)
1.5 cups
作り方

sautee eggplant until soft, but not mushy on med-hi heat and when done set aside in a bowl.

Sautee mushrooms. When done, add to cooked eggplant.

sautee pepper, onions, garlic and when done add to bowl of cooked veggies.

cook soyrizo according to package directions. Add cooked veggies and tomato sauce, and heat until all flavors meddle together. Use salt and Red pepper flakes to taste.

top jambalaya over rice, ans sprinkle with Romano or parmesan cheese. Enjoy!
