Spice Braised Pork Shoulder

材料・調味料 (6 人分)
Sugar
2 tbsp
Kosher Salt
2 tsp
Ground Coriander
1/2 tsp
Ground Cumin
1/2 tsp
Ground Black Pepper
1/2 tsp
Ground Cinnamon
1/2 tsp
Ground Cardamom
1/2 tsp
Brown Sugar
1 tbsp
Pork Shoulder
3-4 lb
Vegetable Oil
3 tbsp
Lager Beer (avoid Hoppy Beer)
1 Bottle
Flour
As Needed
Cider Vinegar
2 tsp
Chopped Fresh Cilantro

Mix all spices in a bag and shake.

Use a paper towel and dry the pork shoulder & put the pork in the bag.

Rub the spices onto the meat until all are stuck to the meat and all of it is covered.

Push the air out of the bag and put in refrigerator for 1 day.

On cook day, pre-heat oven to 225 Degrees F.

Heat oil in a Dutch oven over medium high heat.

Brown all of the sides and edges of the pork shoulder.

Pour in beer to cover the bottom of pot.

Cover the pot and put it in the oven.

Slow cook in the oven until the meat easily shreds with a fork. 3-5 hours. When shredding, remove fat pieces and bone, if applicable.

Remove the meat and pour the liquid in a measuring cup.

Add a tbsp of flour to the pot for every cup of liquid.

Slowly add the liquid back to the pot and flour and whisk over low heat until lumps are removed.

Bring the gravy to boil over high heat until thickened. Add more flour if you want thicker gravy.

Remove from heat and add vinegar and cilantro.

Mix the meat with the sauce in the pot and serve.
