Continue working with top quality produce from Mie,last time oyster and hijiki seaweed proved to be a success,so I gave it one more try,this time more of a French theme,using blue cheese and yamaimo,which work very well with oyster.
Japanese people are so good at using Japanese ingredient to make European food,I rarely see other places has such success doing it,I am constantly inspired by your cuisine! This one is not hard to figure out,I wanted to use hijiki to make a European dish,oyster works well with blue cheese and root vegetables,along with the hijiki and bechamel sauce,I had a wonderful dish!Thanks to you too,for the gift! Last time I used oyster and hijiki for a yakiudon,was very happy with it so I do another one,western dish this time!Oyster goes well with blue cheese,but no need to put a lot otherwise it could be too strong for hijiki.Yamaimo also delicious with blue cheese!

Thank you Makoo San!I am so happy you are interested in it! It started off with the oyster and hijiki combination,then I work it on! I didn't grate the yamaimo in the bechamel,I just chopped it up and simmer in water till almost done,then poach the oyster in the same water too,then use some of this water and milk to make bechamel,add some blue cheese in it too(no need to put too much cheese,or it will be hard to taste the hijiki),then put back in the yamaimo,reconstituted hijiki,also some sautéed onion,mix around,then pour in a dish and bake. It's how I did it,I hope you understand,if not please let me know! Or if you have better idea,go ahead and try!
