材料・調味料 (7 人分)
Ripe tomatoes
5 cups
Mango purée or frozen Mango
2 cups
Chopped red pepper without seeds
1 piece
Chopped cucumber peeled, without seeds
1 cup
Chopped onion
2 cups
Garlic
1-2 cloves
Croutons
For garnish
Water soaked of French bread
3 slices
Salt
3 tsp
Extra virgin olive oil
1/2 cup
Apple vinegar
2 tbs
Sugar
1 tbs
Black pepper
1/4 tsp
Chilly sauce
10-15 drops
Worcestershire sauce
1 tsp
Ice cubes

Water if necessary

作り方

Peeled and chopped tomatoes, mango purée, peppers, cucumber, onion and garlic. The peppers without the seeds. Mix all ingredients.

In electric mixer, place the soaked bread and mixture of ingredients, add a little water and mash until you get a cream. Add cold water if necessary and mix well. Check the salt and vinegar.

Going through an strainer or a food mill to remove skin or seeds from peppers or tomatoes.

Add more water if necessary, must be a liquid cream texture add 6-8 pieces of ice. Place in the refrigerator until you achieve the desire temperature(6 hours) and ready to serve sprinkle with a dash of extra virgin oil.

Serve with a garnish of diced raw cucumber, tomatoes, croutons, diced red pepper and chopped onion.
