I don't know whether I have post this Vietnamese dish here or not,if I haven't,I have no idea why,because if I want a quick and tasty chicken dish,I always go for this.Chicken is chopped up in pieces,mix with ginger,scallion,salt ,fish sauce and caramel sauce,put everything in a pot,cover and cook f
for 10 min,remove cover and reduce sauce,and it's done.The flavour is too good for something that simple!

Thank you!It really is teriyaki style from Vietnam,but even more simple!Although only take short time,the chicken is so good absorbing the delicious sauce!I hope everyone could try!

Yep,I checked,and I really had post this before,wasn't even that long ago,I have no idea why I forgotten,my memory is going bad...
Might not be the best looking,but it really is delicious,so simple that it doesn't seem possible.
That's right,eaten with plain rice is best with this.
Also works with j
just chicken thigh and wings if whole chicken is hard to find,if you want to try.

Here you are:chop up a 1 2/3 pound chicken,mix with few pieces of ginger,3 tbp caramel sauce,2tbp fish sauce,1/4 tsp salt,3 scallions chopped,put everything in a pot,bring to a strong simmer,medium heat,cover and cook for 10 min,uncover and cook for 5 more mins to reduce sauce,stirring occasionally.
I use heavy cast iron pot,so no water needed to add,add a couple tbp of water if you use other pot.

It's alright,call me anything.Actually you could make your own caramel sauce:Just put about half cup of sugar in a pot,turn on heat(medium) and watch it melt,and goes from clear to dark red(occasionally swirl around),stop there and turn off heat,pour over some water(about 3/4 of the sugar,be careful
it's extremely hot and will splatter ),turn on heat again,it's ready when the dark caramel dissolves into the water,this is your sauce.All the measurements I give you are approximate,please adjust according to your liking.Please notify me when you post your dish,I'll check it out,have fun!
