After poaching the pears,I was left with so much poaching red wine liquid,and it would be a sin to throw it away,so I reduced it,mixed it in the apple butter. The apple butter is ZC San's recipe,one of the best find in SD,tastes amazing and so simple to make,it's something I made from time to time to have my bread with.This one with red wine is a nice variation. Since ZC San doesn't come here anymore,I better not bother her,but I can't thank her enough!
ZC San's apple butter is the best thing in SD,it always shows up at my breakfast table.Looking at the leftover red wine,I though it should go with it,and it does,wine lover like you will agree! I just blended it with hand held blender,mine is a powerful one,it came out smooth,no further straining is needed!
You are right,I tasted the liquid right after the pears were ready,and it was amazing,just couldn't waste that!Initially I wanted to freeze it for poaching fruits again,but when I was doing apple butter and I thought I could add some in,the result was marvelous!Apple butter is very good already,but this adds another dimension! I also made something else with the red wine,I might post it next time! There really are many things you could do with it,may be you could think of something better,I am waiting!! But the star really is the apple butter form ZC San,I had made many times,only this time I do a variation.It's adult taste,but I don't drink much alcohol,I only like to cook with it,this is perfect!
